This is because the player spends significant time waiting for the animation to complete so they can see the effect of their action.
Animations for building, crafting, etc: Animations quickly become tedious.After a while, they start to detract from the gameplay rather than add to it. In my personal opinion, it's hard to justify this mechanic existing at all. Shovels and Digging Holes: This is the most beautiful and interesting digging animation I've seen, but what value is it bringing to the player? If the screen just went black and some digging sounds played, would the game be less enjoyable? The shovel is a Macguffin that gates specific plot points, but has otherwise no function in the core mechanics that make the game fun to play. In my personal opinion, it feels like animations and realism were prioritized over fun and compelling gameplay: I am interested to hear others' thoughts. 
In general, I enjoyed the game, but feel disappointed that the direction doesn't seem to realize it's potential.
It's in early access, so these thoughts are to be taken lightly. Having recently finished the game, I've been reflecting on the experience so far.
